Quick and Easy High-Protein Scramble

 

Ingredients:

  • 2 eggs
  • 100g egg whites (almost 1/2 cup)
  • 70-100g cottage cheese (a very generous tablespoon)
  • 1 small avocado or 1/2 a large avocado
  • Salt and pepper to taste
  • A little oil for cooking

Instructions:

  1. Prep Your Pan: Start by heating a pan on medium-high heat. Add a little oil to prevent sticking.

  2. Whisk It Up: In a bowl, whisk together the eggs, egg whites, and cottage cheese. This mixture is packed with protein, ensuring you get a healthy dose with every bite.

  3. Cook the Eggs: Pour the egg mixture into the heated pan. Cook by stirring occasionally until the eggs are scrambled to your desired consistency. Add salt and pepper to taste.

  4. Prepare the Avocado: Slice a small avocado or half of a large one. Sprinkle a little salt on top to enhance the flavor.

  5. Enjoy Your Meal: Plate your scrambled eggs and avocado. You could also add a slice of toast with butter. This simple meal is not only quick to prepare but also incredibly nutritious and satisfying.
