Overnight Quinoa
Have you tried overnight quinoa? If not then give it a try. It sits different than the overnight oats.
What you need to do: FIRST make quinoa - SEE HERE:
- 1 cup quinoa rinsed + 2 cups water added to pot, brought to boil and then let simmer on low heat for 15-20 minutes until the water is absorbed. Keep the lid on the whole time and stir a couple times while it is cooking so it does not stick to the pot!
Next add the following ingredients to a jar that you can close overnight:
- 1/2 cup cooked quinoa
- 1-2 tbsp chia seeds
- 1 scoop protein powder (I used chocolate but you can try whatever!)
- 1 and 1/4-1/2 cup milk depending on how much you use of the chia seeds (I used whole milk but you can use whatever milk that goes well with your protein)
- THEN for the juicy part (optional). Make it your own by adding spices. I added 1/2 tsp of cinnamon and 1/4 tsp nutmeg to mine. You could add only cinnamon or only vanilla for example.
- If your protein is not sweet add 1 tbsp maple syrup
The next day add toppings: I added peanut butter and an apple. Depending on what taste you are aiming for you could add a banana, berries or whatever you desire.
This recipe will give you around 30gr protein.
I used the following: 1/2 cup cooked quinoa, 1 scoop chocolate protein, 2 tbsp chia seeds, 1 and 1/2 cup whole milk, 1/2 tsp cinnamon, 1/4 tsp nut meg. Mix it all together. Added 1/2 tbsp peanut better and 1/2 pink lady apple the next day.
