I've been making oat bars for years, but after losing my original recipe, I recreated this version with a slightly different twist. If you're expecting a crunchy bar, these are more like soft bread. However, if you like a bit more crunch, try toasting them!
A quick tip: make sure to cut the bars into toaster-friendly sizes if you go that route.
And if you are a busy mom like me remember to first turn on the oven before you make everything!

- Heat oven to 400°F (200°C)
- Mash the ripe bananas
- Mix in the egg whites
- Add the vanilla extract and stir
- Stir in the oats, chia seeds, and flax seeds
- Add baking soda and flour, then mix everything well
- Pour the mixture into a baking pan (I used 15''X12'' / 38cmX30cm)
- Bake at 400°F (200°C) for 15-18 minutes
- Allow to cool on a baking rack for the best texture
- Cut them to the size you prefer (keep in mind to have them larger if you are going to toast them)
Store them after they have cooled down in the fridge or freezer.
Toast them or heat in the microwave for them to taste like they just came out of the oven. Perfect to add a little peanut butter or almond butter on top (if you are looking to lose weight just add a little on each).
